A Michelin-starred chef is leading a quiet revolution in hospital kitchens, trading processed meal replacements for fresh, comforting dishes. After three years of rethinking the standard hospital menu, chef Geoffrey Zakarian is rolling out a new approach built on the principle that food can aid in recovery.
The changes go beyond swapping out bland trays. Zakarian is removing boxed nutritional shakes, seed oils, and added sugar from patient meals.
